I have been blessed with a fantastic eater. Put just about anything in front of this kid and she will wolf it down before i can even finish cutting it up for her. Here is one of her favorite recipes, (and mine too because of how incredibly easy it is!)
Baby Friendly Fruit Pancake:
1/4 cup of oats
1/4 to 1/2 cup of fresh fruit
1/2 teaspoon of baking powder
Toss all ingredients into a nutribullet or something like it and blend until smooth. If too thick, add a tiny bit of water or milk.
In a small egg pan, spray a bit of cooking spray and pour entire contents into the pan. Cook both sides over medium heat. Top with a teaspoon of coconut oil and chopped fruit. Voila! Breakfast is served!
Egg substitutes: Banana or ground flax.
