Easy Green Quick Cakes

As the toddler becomes more of a toddler, and her favorite food is by far French fries, I've been looking for fun and easy ways to sneak in veggies where I can.
These green pancakes were a hit yesterday! And you know what? They were really green and they tasted reaaaaaaally good!
Here's the recipe:
-1 cup old fashioned oats
-2 eggs
-1 ripe banana
-1/2 cup fresh spinach
-1tsp vanilla
-1/2 tsp cinnamon or pumpkin spice
-1/8 to 1/4 cup almond milk (gradually add to achieve desired thickness)
Directions: Heat pan over medium heat and prep with cooking spray. Blend all ingredients together (I use a nutribullet). Pour 1/4 cup to half cup portions in your pan and cook, flipping halfway through. Top with syrup or coconut oil. Enjoy!
Makes 4-5 medium pancakes. The kid and I had two each.
