Cookie dough… Is there anything better?! The sweet & salty taste, the creaminess, the crunch of sweet hidden chocolate morsels in every bite... Need I go on?
I don't know about you, but often times, half of the cookie dough doesn't even make it into the oven (#noshameinmycookiedoughgame). So as hot summer months approach, why not just leave the oven out of it all together for a yummy, cool treat?
Here’s my take! The nuttiness of almond flour adds to the rich flavor, the soft aroma of vanilla is reminiscent of your favorite childhood chocolate chip cookie recipe. Perfect for a quick snack or after dinner treat! Egg-free so you and your babies can enjoy it whenever you want.
-2 cups almond flour
-1 cup rolled outs
-½ cup melted coconut oil
-1/3 - 1/2 cup honey or maple syrup based on desired sweetness
-1/2-3/4 cup extra dark chocolate chips, chopped
-1tsp vanilla extract
-½ tsp salt
Using a cookie sheet, line with parchment paper if you have it. Mix all ingredients together until you have a nice, creamy dough. Using a teaspoon, scoop out rounded teaspoons of dough and use your hands to roll them into balls. Place on cookie sheet in rows of 4-5. Once finished, place cookie dough bites in fridge or freezer to firm up! Enjoy right away on their own, with a glass of your fav milk, crumble over a bowl of Greek yogurt, or top with a dollop of favorite whipped topping! These keep best in an airtight container in the freezer. Yields about 25-30 bites.
